Today I'll be preparing MTN Rice using my mother's recipe..... Yup, let's dive in.

Ingredients
3 cups of Rice
½ Teaspoon of Salt
10g of Crayfish
3 Teaspoons of Dry pepper
50cl of Red oil
3 bulbs of medium size Onions
2 pairs of Dry fish (ibat)
4 eggs
4 sachets of water(75 cl each altogether 300cl of water)
Scent leaf






Procedure
Always remember to wash your hands thoroughly before cooking, hygiene is very important.
Step 1:
Pour rice into a clean pot and pour in 120cl of water(i.e a sachet and a bit more quantity from another sachet)
Since my egg is fresh, I decided to add it to the pot so that it'd cook while the rice is being parboiled. Allow it to cook for 15 minutes.



Step 2
While waiting, prep your ingredients i.e slice the onions, grind the p
Crayfish, pieces the fish and slice the scent leaf etc.



After 15 minutes, bring down my rice from the fire, pour it into a filter and then into a basin pot, anything that you're comfortable with for easy Washing of the rice wash until the water is clear and clean.

Step 3
After washing the parboiled rice well, pour it into a pot then pour all your Ingredients except eggs and scent leaf.





After pouring in all the ingredients, add 2 sachets of water then stir well and taste. Then place the pot of mixture on the fire.



Step 4
Allow to cook for 20 mins, by then the water must have dried or be almost dry. By this time peel the eggs.


Add the scent leaf and eggs and stir to mix well.
Just like that, Your food is ready

Dish out and serve.
There are other methods/recipes for MTN Rice, some persons begin with frying the oil while others add the oil much later but
I love this recipe because it's orthodox and simple, and it allows everything to cook well and appropriately. I recommend this recipe always.
