A delicious cold noodle salad is perfect for a hot summer day. Gemini Ai suggested this one and it was delicious. Quick cooking buckwheat noodles and some letover chicken made it easy.
I would have never dreamed that I would be using Ai to find recipes! I began cooking in the days when there was dedicated space in the kitchen for my extensive cookbook collection, and now everything I am looking for is quickly available on my phone. I have given away all but a few of my most precious cookbooks and gained more kitchen space

Goma Dare Dressing
Whisk together until smooth:
- 3 tbsp roasted white sesame paste (or tahini)
- 1 tbsp toasted sesame oil
- 1.5 tbsp soy sauce (or tamari)
- 1 tbsp rice vinegar
- 1 tbsp mirin
- 1 tsp sugar or honey
- 1 tsp freshly grated ginger



- 1 cup cabbage, thinly shredded
- 1 cucumber, julienned or thinly sliced
- 1 medium carrot, julienned
or other vegetables. Red bell pepper made a tasty colorful addition.


Boil soba noodles according to package instructions (typically 4–5 minutes). Drain immediately and plunge into an ice bath or rinse thoroughly under cold running water to remove excess starch and prevent sticking. Drain well.

Combine noodles, vegetables chcken and dressing. Top with cilantro, sliced scallons and toasted sesame seeds.


Mix well, serve and enjoy.

I love Marukan rice vinegar! Your recipe looks so good. I love eating soba noodles, especially in the summer. The soba looks delicious! I also love drinking the hot water (soba-yu) after boiling the noodles.
I had no idea drinking the hot water was a thing to do! I will try it next time.
