This is the best bread- sourdough.
No other bread even comes close. In my opinion only sourdough bread is real bread and should be called bread.
Fermentation for the win.

Hypertrophic cardiomyopathy (HCM) is the most common cause of sudden death in young athletes. In simple terms, HCM means the heart wall or part of the heart wall becomes thick. It mostly happens on the left side of the heart.
Chest pain, breathing difficulties, disordered heart rhythm, or sometimes sudden death during or after exercise are the features of HCM.
It runs in the family, i.e. it’s a genetic disorder. If there is a family history of sudden death in a young member, other members, particularly those whose work/job is related to physical exertion (e.g. an athlete), should be examined for such a heart condition.
