Having a good appetite is a blessing, especially when it comes to a food of pur choice.

So, what's your absolute favourite meal you could eat everyday?!? Got a recipe with it?

The rich heritage coincides with rich food in our state. Rich food I meant, the hygienic one prepared at home. Here, people do not hesitate to cook for three tines a day. And one of the favourite meal of most peoples in my state is Ari Pathiri also called as orotti. Also, my favourite meal.
It usually goes well with Beef stew or egg curry. Another important point is, it is cooked during Ramadan on all 30 days, to have it, after breaking the fast. Its all time available in functions like wedding, house warming and receptions.

It is a rice flat thin bread or else a rice pancake. Moreover, its more tasty when eaten with coconut milk. Before having it, you can add some coconut milk over it and then add the curry to it.
Preparation is very simple. Here I made orotti and egg curry at home.
Ingredients required
- Rice flour - 1 cup
- Water for boiling 1 1/2 cup
- Salt - to taste
- Cooking oil - 1 tbsp
Preparation of rice flat bread
Firstly boil the water. To the boiling water add salt and oil. Now, gently add the rice flour little by little. Do not put the flour all together in the boiing water. Gradually while putting the flour, mix it with a ladle so that lumps don't form. Once done, switch off the flame, cover it and keep it for 25 to 30 minutes.
After 30 minutes, knead it well with hand sand make small round balls of lemon size. Gently put them in a chapati maker and press one by one.
Now, keep a frying pan in the stove and cook it while flipping them just once or twice in a hot frying pan. You can see them raise like a ball which means it is very soft to eat.
Have it hot with Beef stew or Egg curry.
Preparation of Egg curry
Boil 3 eggs and keep aside. In a non stick pan saute 3 finely chopped onion, 2 tomatoes, a piece of giner and 2 to 3 garlic flakes along with green chilli and 2 tomatoes. Once sauted add turmeric powder, chilli powder and coriander powder. Now let it cook for another 5 minutes. Switch off the flame. Your curry is ready.
This is one of the favourite meals of any person from Kerala, South India. This remains fresh for the next day too. People travelling abroad, take around 50 to 100 rice flat bread to share it with theie relatives and frienda from kerala.
I love this meal. Mostly it is considered as a breakfast item in our state, though rarely people have it even at night.
