Uha soup for a Friend in need

Ofe(Soup) Ura or Uha is a popular soup that exist among the ibos. It's soup i don't joke with, infact it is my favorite soup when it comes to swallow and soup. Surprisingly i heard my five year old little niece say this is my soup, comprehending that sentence was difficult for me so i had to ask the mum what she meant by that. She meant "it's her favorite," oh waow!! But then she had received a phone call from a friend who is hospitalized and what to eat soup that very day, being specific she said, please do not add egusi(melon) to it. So it was an energy for energy. I gladly went into the power house(kitchen) to get ot done.

Our ingredients for making the soup for our friend

  • 1kg beef
  • 500g stockfish
  • 1 teaspoon of pepper
  • 30ml palm oil
  • 1 teaspoon of salt
  • 5 leaves of uziza dried or fresh (optional)
  • 100g of Uja leave
  • 150g of thickener (ofor)
  • 300g of crayfish

Here i have the meat, already cooked, we already have this and wanted make use of it to prepare something else.

The Stockfish

Step one
Transfer the meat with the stock into a more comfortable pot. Washed the stockfish and added it, cover to cook so the everything becomes soft.

Step two
While allowing it to cook, i went over to blend my thickener, the crayfish and the pepper. After blending i continued with selecting my dried uziza leaves, remember am making use of the dried because i can't reach the fresh, at the moment, so feel free to make use of the fresh one.

Step three
Going back to the pot on fire, i checked and it's done. I added my palm oil cover and allow to cook for minutes.

Back again i added the thickener, cover and allow to cook. If it doesn't cook well it will end up forming balls in the soup and you won't like it.

Checking back it's okay and i love the consistency i have so i introduced my crayfish.

Introducing my salt and pepper stir well and allow to simmer.

Step four
I washed my uziza leaves, add, stir and cover for few minutes to allow it bring out it's aroma.

Lastly i added the Uha, stir and gbam the soup is done. You can't wait to have a taste right, don't worry am getting a plate of it for you, you won't just taste but you'll eat.

I was tempted as well not to keep to my promise, imagination of how I wan finish soup that I am supposed to send to someone.
