Chimichurri blends cilantro, garlic, onion, vinegar, lime juice, olive oil, and spices—perfect for meat or bread.
Ingredients:
- 1 cup fresh cilantro (finely chopped)
- ½ cup fresh parsley (optional, or more cilantro if not available)
- 6 garlic cloves
- ¼ cup white vinegar or coconut vinegar
- Juice of 1 lime or sour orange
- ½ cup olive oil
- ½ white or red onion
- 1 tsp dried oregano
- 1 tsp ají cachucha or chili flakes (optional)
- Salt and black pepper to taste
Instructions:
- Finely chop the garlic, onion, and herbs—or pulse them in a food processor.
- In a bowl or jar, mix the vinegar, lime juice, salt, pepper, and oregano.
- Slowly stir in the olive oil until it all comes together.
- Let it rest for 15–30 minutes so the flavors can bloom.
