Spinach a seasonal plant is quiet popular in most of our Indian household. In South we call it Keera in one state and ** Cheera in another state. Here its available in two colours - Brown and Green. Usually, they are grown in the kitchen yard of most homes. Planting them during summer season gives fresh leaves in ample numbers rather than planting them in rainy season, where we get limited yield and moat leaves are eaten by insects. So the best time of its harvest is summer.
Green spinach
When you see the medicinal side of this leafy vegetable Spinach, especially the red one, they are rich in fibre which simultaneously reduces constipation and helps in digestion when the intake is regular.
Also, they are rich in Vitamin A which helps to iimprove our eyesight. Truly a trustable antioxidant. In earlier years, I have seen my grandparents reading newpapers and magazines without the help of glassess. May be the result of continuous intake of Spinach.

Now, if I talk about the manure. Here many of them use dried cowdung as the best manure apart from dry leaves, rice starch etc We get tender stems with fresh big leaves. At my home we prefer mixing used and dried tea leaves with rice starch. It gives a good result.
Above all, its a good business for ladies around. Because this comes to the market from many households. With less water and manure, you get a good yield. This grows quickly when sowed near rice fields or paddy fields as the soil is damp and fertilized.
While it comes to cooking, one of the healthiest forms of cooking is by cleaning and cutting the spinach in small pieces along with a handfull of shallots. Fry them after spluttering mustard seeds in coconut oil. Just 4 to 5 minites is enough to retain its freshness. Last but not the least, add some grated coconut to it and switch off the flame. Eat it hot with rice.
