Greetings dear foodies from the Vegan community. Hope you are enjoying your weekend. When it comes to fooding, the list is endless.
So for my weekend I prepared a Vegetable Kurma which goes well with Naan, rotis and breads. When I started preparing I thought I will share the recipe with you. I learnt this from my Mother. So let's go friends...
INGREDIENTS REQUIRED
- Beans - 100 gms
- Carrot - 100 gms
- Potato - 1 medium sized
- Soaked (overnight) Green peas - 100 gms
- Onion - 1 large
- Tomato - 1 medium sized
- Ginger - 1 tsp crushed
- Garlic - 1 tsp crushed
- Green Chilli - 1 or 2 (as per spice
Grinded mixture
- Coconut - 1/2 of one Coconut
- Cinnamon - 1 inch in length
- Cloves - 2
- Fennel seeds - 1 tsp
Spices
- Chilli powder - 1/2 tsp
- Coriander powder - 1/2 tsp
- Turmeric powder - 1/2 tsp
For tempering
- Coconut oil - 1 tablespoon
- Mustard seeds - 1 tsp
- Red chilli - 1 or 2
- Curry leaves - a handfull
For garnishing
- Coriander levaes - a handful
PREPARATION METHOD
STEP 1
Wash the vegetables well, drain and keep them aside . Once drained cut them in equal size (1/2 inch) . Grind ginger garlic to paste.
STEP 2
Take a cooker and add just 1tsp of coconut oil. First add the ginger garlic paste and then saute onions and green chillies. To make the onions translucent add some salt. Now, add the veggies one after the other along with the tomatoes.
STEP 3
Meanwhile, take a mixer and grind Coconut along with Feennel seeds, Cinnamon sticks and Cloves. Keep them aside.
After 5 minutes of sauting the veggies, add turmeric powder, chilli powder and coriander as per the mentioned measurement. Now, keep it closed for two minutes and then saute.
STEP 4
Open the lid and now add the grinded coxonut gravy to the veggies. Take a ladle and mix them well. Now close the cooker and turn off the cooker in just one whistle.
STEP 5
Once it cools open the lid. Keep a pan in another stove add 1 tablespoon of coconut oil and once hot add mustard seeds, red chillies and curry leaves. Now pour it hat into the pressure cooked veggies. Garnish with coriander leaves.
This goes well with indian parathas and rotis. Enjoy your fooding with great aroma from tempering and garnish of coriander leaf.l
