It's a new week, a beautiful week for me as it's starting with the creative Sunday initiative and this time, I'm sharing recipe of a meal I prepared last week, vegetable soup (also called Efo Riro). It's really not easy making a video of cooking process but I was excited about this preparation.
It's one of my favourite soup because of the vegetables that is lavished in it and I made sure to do that much on it, a small meal but I was very intentional about the nutritional benefits I'll get from it so I didn't hold back in getting some of the ingredients to give the nutrient dose I wanted.
Before deciding to prepare the meal, I had a very rough week and was down in heath. Once I got myself back, I chose to treat myself to something nice at home by cooking this delicacy instead of buying out meals that might not even add anything for me and would be more expensive.
I enjoyed the process of making this meal and I'd love to share how I prepare mine, these are the ingredients I bought for my Vegetable soup. And the process is detailed in the video above.
- Meat and Smoked fish.
- Cowskin.
- Palm Oil
- Vegetables (Pumpkin, water and scent leaf).
- Periwinkle and Snails.
- Fresh tomatoes and pepper and onions.
- Crayfish, prawns, maggi, salt and spices.
Aside the meat, fish and snails, the rest are cheap to buy and you can always choose to use whatever protein you want. I needed something to revitalize myself so I did a lot of extras with the ingredients but you can make do with little and still have a great taste of your vegetable soup.
The meal came out really delicious that I couldn't stop eating until I was so full. I mean, it's expected with all that stoppers and vegetables. Adding scent leaves seemed to have been a good hack in giving it a unique taste and aroma so I'm recommending you make sure to add it too if you decided to prepare the soup.
