i'm not really into cooking great looking dishes and over the top techniques.
i choose effortlessness and taste over any other things.
i cook for myself, i make comfort food to comfort myself.
so here is one i made to comfort my pocket as well.
mongo bean soup

it not the common version, i also considered health in cooking.
so here is what i did.
- sauteed onions and garlic.
- added in small slices of pork.
- added the mushrooms when the pork looked a bit cooked.

- i found some eggplant, so i also added that in.
- seasoned with salt and pepper.
i could have stopped at this point and i would have been happy.
that looked fine already, but i was craving for a soup and i have preprepared the beans already.
there is no turning back.

- finally added the precooked mongo beans.
mongo beans are otherwise called as mung beans, those small little green beans.
i soaked a cup of those beans overnight, by morning they would grow and be easier to cook.
preboiled those presoaked beans for around 30 or 40 minutes.
(i guess i should have mentioned this at the start.
just shows how i don't really do food blogs.)
- i added some fish sauce (patis or nanpura) to taste.
- and served the dish with rice while hot.
now here is my game plan for the dish, i am pretty sure that this will take days to consume.
so i am planning to add additional ingredients each day during the reheat.
i still have spinach and tofu in the ref, so these will surely be added in the coming days.
i will probably start with the spinach first for more vegetables.
in this way, i would have different flavor profile each day.
genius, am i not?
