Bread and Birds.

There's so much going this week, I didn't even select my favorites. Which is not an easy task - unfortunately because I did not take many "great" pictures. It's more about story telling I guess. Except for the sunsets and rises, maybe.

We're currently working on a new line of bread. Smaller loaves, pure sourdough, with special ingredients. This one is a 40% whole wheat with olive oil. "Mediterranean Bread" I called it. High temperature baking, giving for a great crust and flavor - unfortunately, the experiments went quite wrong. Mistakes on all fronts. This week will be better, I know that. I'm sure of it. This loaf did not contain enough salt. But it looked incredibly beautiful, so I used it for photo sessions. Going to manipulate the colors a little, though.

I need to walk a lot these days. It helps me to clear my mind and make sense of everything. And I see flowers. Everywhere, flowers. It's raining season slowly going into summer, and the flowers know it. They're getting ready to rise and shine all over the place.

Some of my walks lead me to the courthouse, and then to the letters. I talked about them a few times in my alternate account, @beelshops, where I write my diary. But I haven't published a picture yet. It's not easy to take one with a cellphone, as it's high up on the hillside. So I took one from the back. Has kind of a mirror-feeling.

Sunrise on Friday. Hope. I had to get up early to get to Quito that day. To get my new passport. To deliver court orders. To do so many things. It felt good to see the sun come up like that. I took it as a good sign.

The sunsets didn't disappoint, either. I didn't take many pictures of them, as I was usually busy around sunset. Or too tired.

Then the birds. Here's one kind-of-hidden. If you focus, you'll find it easily though.

Then our little dove in its nest on our ladder. In this one, mom is still on top of it all. But within one week, well, let's say that birds seem to grow quicker than humans. By a lot.

Here's the little bugger peaking out for the first time. Already too big to be cuddled too much by mommy.

And that was Sunday. Today, he was flying around already. They really do grow quickly.

Me, I'll enjoy the next 10 years. As much as I can. Before Lily goes her own way, too. And then I'll enjoy the years in a different way. It's something else to see them grow.

My wife has been baking different sourdough recipes. It is something she just started doing a couple months ago as a hobby. I really enjoy it.

As far as getting up and watching the sunrise? Still enjoy a cup of coffee and watching it come up myself. Think the days always start well that way.

Kids grow fast. Not as fast as baby birds persay, but fast. But there is more to enjoy with them after they are grown as well.

Nothing but a hit cup of coffee in refreshing chill of a very early morning. When I was still doing all the work at the bakery, that was usually my moment. Bread in the oven, everything shaped, so I sat down on the steps to the street, drank a cup, listened to the birds and enjoyed the tranquility.

That bread looks amazing. Can I have half please?

But it's worth it! 🤣🤣 Ecuador is well worth traveling, though. A quite amazing country. 13 years here and still haven't seen half if it, or at least it feels like it.

I'm sure it worth flying 12k km there for that yummy bread 😆

One day for sure, but I'll have to work very hard till then 😎
